  • Coconut oil
  • Eggs

Streusel Topping Ingredients:

  • Brown Sugar
  • Butter
  • Cinnamon

Preheat oven to 425°F. Prepare a 12-cup muffin pan with nonstick spray.

In a large bowl, whisk together the egg, milk, oil and vanilla, then add the rolled oats. Set aside.

In a medium bowl, combine flour, sugar, baking powder, cinnamon and salt.

Add dry ingredients to the wet ingredients and stir until just moistened. Gently fold in the raisins.

Divide mixture evenly into the prepared muffin pan.

In a small bowl, make the streusel topping combining the brown sugar, flour, cinnamon and cold butter. Use a fork to cut the butter into the flour mixture resulting in tiny pea-sized pieces.

Bake at 450°F for 5 minutes.

Then, reduce the temperature to 350°F and bake for an additional 10 minutes or until a toothpick inserted in the center comes out clean.

  • ¼ cup brown sugar
  • 1 tablespoon baking powder

  • ¼ cup coconut oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • ½ cup raisins

Streusel Topping

  • 2 tablespoons packed brown sugar
  • 2 tablespoons all purpose flour
  • 1 teaspoon cinnamon, ground
  • 1 teaspoon butter, unsalted

Instructions

  1. Preheat oven to 425°F.

  7. Prepare the streusel topping, by combining the brown sugar, flour, cinnamon and butter. Use a fork to cut the butter into pea sized pieces in the flour mixture.

  8. Bake for 425°F for 5 minutes, the reduce the oven temperature to 350°F. Continue baking for 15 minutes or until a toothpick inserted in the center comes out clean. 
  9. Remove from the oven and leave muffins in the pan for 5 minutes. Then transfer to a wire rack to cool completely.
