Ingredients

  • ½ cup old fashioned rolled oats
  • ½ cup unsweetened almond milk

  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • Pinch of salt
  • ½ cup fresh or frozen blueberries

Instructions

  1. In a medium sized bowl or overnight oats container, add the oats, chia seeds, yogurt, almond milk, honey, vanilla, lemon juice, lemon zest and salt. Stir until well combined.
  2. Next, fold in the blueberries.
  3. Cover and store in the refrigerator for about 12 hours.
  4. In the morning, top with fresh blueberries, lemon zest, sliced almonds or whatever oatmeal toppings you have a craving for.

Notes

The consistency of the soaked oatmeal will be relatively thick. If you want to, change up the overnight oats water ratio by adding more yogurt or almond milk to make a porridge style thinness.

To make this recipe vegan, substitute the honey for maple syrup, stevia or another natural sweetener. Furthermore, use a dairy free yogurt alternative like almond or coconut.

This recipe sounds delicious. But what is the amount of carbohydrates in grams. It says 164 milligrams of carbs? Is this a typo? I hope the carb count isn’t high.

Hello Rose, This is one of our favorite overnight oats recipes. Oats do have a lot of carbohydrates, combined with the natural sugars in the blueberries, there is a decent amount of carbs in this recipe. If you are looking to cut back, the reduce this recipe in half and it will still be plenty filling for a hearty meal prep. There seems to be a bit of confusion when reading the nutritional values in the recipe. Here is the info you were reading: sodium: 164 milligrams carbohydrates: 64 grams Regards, Joshua
