Blueberry Lemon Oatmeal Cookie Tips:

Blueberry lemon oatmeal cookies is an easy to make recipe that is both healthy and delicious. Here are a few handy tips to make the oatmeal cookies fresh tasting every time you take a bite.

  • Blueberries: Blueberries pair extremely well with fresh lemon flavor, and also contain beneficial components like antioxidants, vitamins and minerals.
  • Lemon: Fresh lemon zest gives the oatmeal cookie recipe a zesty twist and refreshing citrus flavor. Zest the lemon into a large bowl and  whisk the butter until smooth and creamy to really activate the essential oils found in the peel.
  • Oats: Rolled oats and quick oats are the preferred type of oats for preparing cookies. Rolled oats are whole rounds while quick oats are thinner pieces, but the difference in the fresh baked results are hardly noticeable.
  • Nuts: Almonds are a fantastic addition to the flavor combination of blueberry and lemon. If you are looking for variations, then also consider adding hazelnuts, pecans, pine nuts and walnuts.
  • Sweetness: Adjust the sweetness to suit your preferred taste. This recipe is not overly sweet, but you could easily add more or reduce the amount of sugar based on your preferences.
  • Make ahead: Raw cookie dough stays fresh in the fridge for up to a week, and can last for about 3 months when frozen. Store the unbaked cookie dough inside an airtight container or ziplock bag to maintain moisture levels.
  • Storage: Fresh baked cookies keep fresh for about 5 days when stored inside an airtight container at room temperature. However, they are guaranteed to be eaten before then! Baked cookies can also be frozen; defrost at room temperature and enjoy.
