  • All purpose flour 
  • Baking powder
  • Baking soda
  • Cinnamon
  • Salt
  • Unsalted butter
  • Brown sugar
  • Egg
  • Vanilla extract
  • Lemon zest
  • Dried blueberries

The intense lemon flavor of this recipe comes from the essential oils in the lemon zest. Zest the lemon in a large bowl so that all the essential oils are captured.

Add the soft butter and brown sugar, whisk until smooth and creamy.

Then, add the egg and vanilla extract, whisk about 30 seconds until the egg reaches the ribbon stage.

In a medium bowl, combine the flour, baking powder, baking soda, cinnamon and salt; mix well.

Gently stir the flour mixture into the wet ingredients until just combined.

Fold in the rolled oats and dried blueberries.

Roll the cookie dough into a log using a sheet of parchment paper.
Refrigerate for 30 minutes.

Prepare a baking sheet with a piece of parchment paper.

Lemon blueberry oatmeal cookies are a healthy snack idea that is made with wholesome ingredients! The fresh lemon and blueberry combination is a forever classic that tastes absolutely magical when blended together into an oatmeal cookie. 

Ingredients

  • 1 cup all purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup light brown sugar
  • 1 egg, room temperature
  • 1 teaspoon vanilla
  • 1 tablespoon lemon zest
  • 1½ cup old fashioned rolled oats
  • ½ cup blueberries, dried

Instructions

  1. In a large mixing bowl, zest the lemon;
    Then add the soft butter and brown sugar, whip for 30 seconds until smooth and creamy.
  2. Beat in eggs and vanilla extract until combined.
  3. In a medium bowl, combine the flour, baking powder, baking soda, cinnamon, and salt; mix well.

  9. Slice the cooke dough into ½” thick rounds. Place the cookies onto the prepared baking sheet

Notes

Make Ahead: Cookie dough will freeze well for up to 3 months. Frozen cookie dough needs an additional 1-2 minutes when baking.
Fresh baked cookies can also be frozen. Thaw for 10 minutes at room temperature before serving.

Storage: Store baked cookies in an airtight container at room temperature for up to five days.
