  • Rolled oats 
  • Coconut flakes
  • Cocoa powder
  • Flaxseed
  • Chocolate chips
  • Almonds
  • Almond butter
  • Maple syrup

Mix together the almond butter and maple syrup in a medium sized bowl. Once the wet ingredients have been blended together, then add the remaining dry ingredients.

Dry Ingredients

  • ½ cup rolled oats
  • ½ cup unsweetened coconut flakes
  • 2 tablespoons ground flaxseed
  • 1 tablespoons unsweetened cocoa powder
  • ¼ cup mini chocolate chips
  • ¼ cup sliced almonds, chopped

Wet Ingredients

Coating

  • ¼ cup unsweetened coconut flakes

Instructions

  1. In a large bowl, mix together the almond butter and maple syrup.
  2. Use a spatula to fold in all of the dry ingredients including the coconut flakes, rolled oats, cocoa powder, flaxseed, chocolate chips and sliced almonds; mix well until fully combined.
  3. Use a 1 ounce cookie scoop to divide the mixture into 16 energy bites. Then roll the bites into balls using the palm of your hands. 
  4. While bites are still moist, roll the balls in the remaining coconut flakes to coat the outside layer.
